You cannot segment what you cannot see.
Most hospitality CRMs hold a name, an address and a contact. That is enough to call and nothing else. You cannot tell a 40-cover neighbourhood restaurant from a 300-cover city-centre operation, or a free house from a site the pubco decides for.
So territories get drawn by postcode, campaigns go out undifferentiated, and the account that was worth ten times the others gets the same sequence as the rest.

Unknown comes back as unknown.
If we could not read a venue, the field is empty and says so. It never comes back as a zero, a default or a plausible guess — because a made-up covers figure in your CRM is worse than a blank one, and you will not find out which it was.
